Ingredients

Method

  1. Knead semolina + maida + oil with warm water into a stiff dough. Rest 20-30 mins. Roll thin, cut small circles, and deep fry until golden and puffed. Cool completely.
  2. Blend mint, coriander, chili, ginger with spices and water for pani. Chill.
  3. Make mashed potato filling. Add a spoonful to puri, add chickpeas if using, drizzle chutneys, and fill with spicy pani just before eating.
  4. Tip (Kolkata style Phuchka): Use more tangy tamarind water and sometimes boiled white peas.
