  1. Brew strong coffee and let it cool completely. Mix in liqueur if using.
  2. Beat egg yolks with 50 g sugar until pale and thick (about 3–4 minutes).
  3. Add mascarpone to the yolk mixture and beat until smooth and creamy.
  4. In a clean bowl, whisk egg whites until soft peaks form. Gradually add remaining 50 g sugar and beat to stiff peaks.
  5. Gently fold the whipped egg whites into the mascarpone mixture in 2–3 additions to keep it light.
  6. Quickly dip each ladyfinger into the coffee (don't soak too long or they'll fall apart) and layer half in a dish (about 20Γ—20 cm).
  7. Spread half the mascarpone cream over the biscuits.
  8. Repeat with another layer of dipped ladyfingers and the remaining cream.
  9. Cover and chill for at least 4 hours (overnight is best).
  10. Before serving, generously dust with cocoa powder and add chocolate shavings if desired.
