Ingredients
- 200β250 g pasta (fettuccine, spaghetti, or penne works best)
- 300 g button mushrooms (sliced)
- 4β5 garlic cloves (finely chopped or minced)
- 1 small onion (finely chopped, optional for extra flavor)
- 200 ml heavy cream (or fresh cream)
- Β½ cup grated Parmesan cheese (or any hard cheese like cheddar/processed cheese)
- 2 tbsp butter
- 1 tbsp olive oil
- Β½ tsp dried thyme or Italian seasoning (or fresh herbs if available)
- Salt and black pepper to taste
- Fresh parsley (chopped, for garnish)
- Optional: A splash of white wine (about ΒΌ cup) for depth of flavor
Method
- Bring a large pot of salted water to a boil. Cook the pasta according to package instructions until al dente. Reserve about Β½ cup of pasta water before draining.
- While the pasta cooks, heat 1 tbsp butter + 1 tbsp olive oil in a large pan over medium heat.
- Add the sliced mushrooms in a single layer. Let them cook undisturbed for 3β4 minutes until they turn golden brown on one side. Then stir and cook for another 3β4 minutes until soft and browned. (Donβt overcrowd the pan β do in batches if needed.)
- Add chopped garlic (and onion if using) to the mushrooms. SautΓ© for 1β2 minutes until fragrant (donβt let garlic burn).
- Optional: Pour in white wine (if using) and let it bubble for 1 minute to reduce slightly.
- Lower the heat. Pour in the heavy cream and stir well. Add dried thyme/Italian seasoning, salt, and black pepper.
- Let the sauce simmer gently for 3β4 minutes until it thickens slightly.
- Stir in grated Parmesan cheese until melted and creamy. If the sauce feels too thick, add a splash of reserved pasta water to loosen it.
- Add the drained pasta directly into the sauce. Toss everything together until the pasta is well coated. Taste and adjust seasoning.
- Garnish with chopped fresh parsley and an extra sprinkle of cheese if desired.
- Serve hot with garlic bread or a simple side salad.
