  1. Bring a large pot of salted water to a boil. Cook the pasta according to package instructions until al dente. Reserve about Β½ cup of pasta water before draining.
  2. While the pasta cooks, heat 1 tbsp butter + 1 tbsp olive oil in a large pan over medium heat.
  3. Add the sliced mushrooms in a single layer. Let them cook undisturbed for 3–4 minutes until they turn golden brown on one side. Then stir and cook for another 3–4 minutes until soft and browned. (Don’t overcrowd the pan β€” do in batches if needed.)

  6. Lower the heat. Pour in the heavy cream and stir well. Add dried thyme/Italian seasoning, salt, and black pepper.
  7. Let the sauce simmer gently for 3–4 minutes until it thickens slightly.
  8. Stir in grated Parmesan cheese until melted and creamy. If the sauce feels too thick, add a splash of reserved pasta water to loosen it.
  9. Add the drained pasta directly into the sauce. Toss everything together until the pasta is well coated. Taste and adjust seasoning.
  10. Garnish with chopped fresh parsley and an extra sprinkle of cheese if desired.
  11. Serve hot with garlic bread or a simple side salad.
