Description
simple Chicken Curry (Murgh Masala / Kosha style lite) dinner recipe – perfect for a student in West Bengal/PG/hostel. 🔥 .
Ingredients
- Chicken – 500g (with bone best for taste, curry cut)
- 2 big onions (finely chopped or paste if blender hai)
- 2 tomatoes (chopped or pureed)
- 1 tbsp ginger-garlic paste (or 1 inch ginger + 5-6 garlic cloves crushed)
- 1-2 green chillies (slit)
- 1 tsp jeera (cumin seeds)
- 1 tsp haldi (turmeric)
- 1-2 tsp red chilli powder (adjust spice level)
- 1-1½ tsp dhania powder (coriander)
- ½ tsp garam masala (optional but nice kick)
- Salt to taste
- 3-4 tbsp oil (mustard oil if Bengali vibe chahiye)
- Handful coriander leaves (chopped for garnish)
- Water as needed
- Rice / roti to serve
Method
- Chicken ko dho ke salt + haldi thoda daal ke mix kar lo (10 min rakh sakte ho, ya seedha start).
- Kadhai mein oil garam karo → jeera daal ke crackle hone do (10 sec).
- Onion daal do → golden brown hone tak fry karo (medium flame, 8-10 mins – patience bro, yahin se taste aata hai).
- Ginger-garlic paste + green chillies daalo → 1-2 min bhuno taaki kaccha smell gayab ho.
- Tomato daal do → soft hone tak cook karo (masala oil chhodne lagega, 4-5 mins).
- Ab dry masale: haldi + red chilli powder + dhania powder + salt daal ke achhe se bhuno (2-3 mins, thoda pani sprinkle kar sakte ho agar chipak raha hai).
- Chicken pieces daal do → high flame pe 5-7 mins fry karo taaki chicken surface se seal ho jaye (colour change ho jayega).
- Flame low karo → cover karke 10-15 mins pakao (chicken apna pani chhod dega). Beech beech mein hilate raho.
- Jab chicken almost done lage (fork se check kar lo), thoda pani daal ke gravy bana lo (jitna thick ya runny chahiye).
- Garam masala daal ke 2 min aur simmer karo.
- Last mein coriander leaves daal ke mix kar lo. Flame band!
- Garam rice ya soft roti ke saath serve karo. Thoda ghee daal do upar se for extra Bengali touch 😭
