super easy, quick Anda Bhurji (spicy Indian scrambled eggs) breakfast recipe β perfect for a student in West Bengal/PG/hostel life. Takes 10 mins max, cheap af, and fills you up properly π₯ No fancy stuff needed, just basic eggs + mess kitchen vibes.
Ingredients
- Stuff you need:
- Eggs β 3-4 (the more, the merrier)
- 1 small onion (finely chopped)
- 1 tomato (chopped, optional but nice)
- 1-2 green chillies (slit or chopped β adjust spice level bro)
- 2-3 garlic cloves (crushed or chopped, skip if lazy)
- Handful coriander leaves (chopped, optional flex)
- Β½ tsp jeera (cumin seeds) or just skip
- Β½ tsp haldi (turmeric)
- Β½-1 tsp red chilli powder
- Salt to taste
- Black pepper pinch (optional)
- Oil or butter β 1-2 tbsp
- Bread slices / roti / paratha to eat with (or just solo like a boss)
Method
- Kadhai ya tawa garam karo, medium flame pe.
- Oil/butter daalo β jeera daal ke crackle hone do (10 sec).
- Onion + green chilli daalo β golden hone tak fry karo (2 mins, jaldi karo subah mein time nahi hota π).
- Garlic daalo (if using) β 30 sec fry.
- Tomato daalo β thoda soft hone do (1 min).
- Ab masale: haldi + red chilli powder + salt daal ke mix karo.
- 20-30 sec bhuno taaki raw smell gayab ho.
- Eggs tod ke seedha kadhai mein daal do.
- Turant spoon se scramble karte jao β low-medium flame pe rakho warna dry ho jayega.
- Jab eggs almost set ho jaye (soft rakhna best lagta hai), coriander daal ke mix kar lo.
- Taste check β zyada namak lage to thoda sugar daal dena (hack for balance).
- Flame band karo, plate mein nikaal lo.
- Garam garam bread toast ke saath ya roti fold karke kha lo. Chai ke saath peak Bengali breakfast feel aa jayega!
